Ravigote Sauce
  • For : 1/2 litre
  • Time : 50 minutes
  • Difficulty : easy

For this recipe, you need :

  • 50 cl sauce veloutee
  • 10 cl white wine
  • 5 cl vinegar
  • 35 g cream butter
  • 15 g chopped shallots
  • 1 sprig chervil, chopped tarragon and chives

Technical Stages :

  • Combine the shallots and cream butter.
  • Reduce the vinegar and wine by half. Bring to a boiling point and whisk with the shallot butter.
  • Finish by combining the chopped herbs.
