Vegetable-based Sauces

Tomato Sauce
  • Time : 30 minutes
  • Difficulty : easy

For this recipe, you need :

  • 2 dl tomato paste
  • 100 g butter
  • 150 g salted pork belly
  • 160 g carotts
  • 160 g onions
  • 4 garlic cloves
  • 50 g flour
  • 1 bouquet garni
  • salt, pepper, sugar

Technical Stages :

  • Peel and wash the carotts and onions.
  • Peel and crush the garlic. Cut the onions and carotts in brunoise.
  • Dice the pork meat.
  • Sweat the carotts, onions and diced belly in a skillet for 5 minutes.
  • Sprinkle with flour. Roast in the oven for 3 minutes.
  • Add the tomato paste and 1.5 litre warm water. Whisk. Add the garlic and bouquet garni.
  • Season with salt, pepper and a pinch of sugar.
  • Bring to a boil, stirring from time to time. Cook over low heat (150°C or 300°F for 1h30 to 2 hours).
  • Check it out from time to time.
  • When finished, filter the sauce through a chinois.
  • Season again if needed.
