Dill Marinated Raw Salmon

For this recipe, you need :
400 g salmon fillet
10 g sugar
50 g olive oil
50 g coarse sea salt
15 g mignonnette pepper
1/2 bunch chopped dill
salt, pepper
lemon
Technical Stages :
Sprinkle the salmon with sugar and brush with olive oil.
Sprinkle with coarse salt, and
mignonnette
pepper.
Cover with chopped dill (1/2 bunch) and wrap hermetically in plastic film.
Keep refrigerated for 3 days.
Slice finely the
marinated
salmon.
Arrange in plates with lemon.
Decoration of your choice.
