Salmon Steaks Roasted with Sesami Seeds
Technical Stages :
- Peel the garlic cloves and blanch them.
- You make the garlic milder by boiling it 5 times in a row and replacing the water after each boiling.
- Thinly dice the peppers.
- Place them in a saucepan, add the cream and the garlic cloves.
- Cook for 4 minutes on medium heat.
- Blend this cream in a mixer then pass through a cloth chinois and keep only the finely sieved coulis. Adjust seasoning and reserve.
- Add salt and pepper to salmon steaks then coat them with sesame seeds on the flesh side.
- Heat a bit of olive oil in a pan.
- When oil is very hot, sear the steaks on the sesame side for 1 minute.
- Flip them and continue to cook covered for 5 minutes.
- Delicately remove the salmon steaks from the pan and drain them on paper towel.
- Dress the plate by decorating the salmon with the pepper coulis and some fresh herbs (parsley, chives...)
