Technical stages for Salmon Steaks Roasted with Sesami Seeds :

Prepare all ingredients.

Peel the garlic cloves and blanch them. You make the garlic milder by boiling it 5 times in a row and replacing the water after each boiling. Thinly dice the peppers.

Place them in a saucepan, add the cream and the garlic cloves.

Cook for 4 minutes on medium heat.

Blend this cream in a mixer...

...then pass through a cloth chinois...

...and keep only the finely sieved coulis. Adjust seasoning and reserve.

Add salt and pepper to salmon steaks then coat them...

...with sesame seeds on the flesh side.

Heat a bit of olive oil in a pan. When oil is very hot, sear the steaks on the sesame side for 1 minute.

Flip them and continue to cook covered for 5 minutes. Delicately remove the salmon steaks from the pan and drain them on paper towel.

Dress the plate by decorating the salmon with the pepper coulis and some fresh herbs (parsley, chives...)
