Ingredients for Sauteed Small Artichokes :

  • 25 small purple artichokes
  • 1 lemon
  • 2 tomatoes
  • 2 garlic cloves
  • 2 small onions
  • 100 g lean pork belly
  • 3 tablespoons olive oil
  • 1 thyme sprig
  • 1/2 bay leaf
  • 8 basil leaves
  • salt
  • pepper

Technical stages for Sauteed Small Artichokes :

  • Cut the tip of the leaves of each artichoke.
  • Remove the choke with a spoon and brush with lemon on all sides.
  • Cut the tomatoes into pieces. Peel and finely the garlic and onions.
  • In a hot pan, the pork for 5 minutes, then drain it.
  • Cook the tomatoes and garlic in this pan for 5 minutes, drain them.
  • Put the artichokes and onions in the pan, add the oil and sauté. Add salt, pepper, crushed thyme and bay leaves. Cook for 10 minutes and add tomatoes and diced pork. Cover and simmer for 20 minutes.
  • Coarsely cut the basil leaves and add them in th epan. Cook 10 more minutes.

  • This recipe has vegetables from the typical mediterranean diet.
  • It is rich in fibers and antioxyde vitamins.
  • To make it even lighter, you can replace the porc belly by lean smoked ham, and use a non-stick pan with only 1 tablespoon of oil.
