Technical stages for Sole in White Wine :
- the soles.
- In a large pot with thick bottom, melt the butter. Cook the slightly floured soles on both sides in the warm butter.
- Add the shallots, white wine, salt, pepper, and simmer for 15 minutes.

- When the soles are cooked, add the crushed tomato an dlet for a few minutes.
- Season if needed.
