Technical stages for Potato Soufflé :
- Cook the potatoes .
- Once cooked, pass them in the press-purée.
- Add the 2 egg yolks, butter, the Swiss cheese and the hot milk.
- Beat the eggs firm.
- Delicately add the firm egg whites to the potato mixture.
- Pour in a buttered soufflé pan.
- Bake in hot oven, 180°C for 20 minutes.
- When finished, serve immediately.
