Technical Stages :
- Peel and crush the garlic. Put in a large pot the cold water, bay leaf, crushed garlic, salt and pepper.
- Bring to a boiling point and sprinkle the vermicelli. Bring again to a boil and simmer over low heat for another 5 minutes, stirring.
- Whisk the egg yolks in a bowl, then pour in the pot, still whisking, to the soup without coagulating the eggs. Season if needed.
- Serve immediately, with stale bread slices and a bowl of grated cheese.
