Ingredients for Garlic Soup :

  • 1.5 litre water
  • 6 garlic cloves
  • 100 g fine vermicelli
  • 1 tablespoon olive oil
  • 2 egg yolks
  • 1 bay leaf
  • 6 slices stale bread
  • 1 bowl grated cheese
  • salt
  • pepper

Technical stages for Garlic Soup :

  • Peel and crush the garlic. Put in a large pot the cold water, bay leaf, crushed garlic, salt and pepper.
  • Bring to a boiling point and sprinkle the vermicelli. Bring again to a boil and simmer over low heat for another 5 minutes, stirring.
  • Whisk the egg yolks in a bowl, then pour in the pot, still whisking, to the soup without coagulating the eggs. Season if needed.
  • Serve immediately, with stale bread slices and a bowl of grated cheese.
