Soup

For this recipe, you need :

  • 1.5 litre pale ale
  • 75 g butter
  • 50 g flour
  • 6 slices of bread
  • 15 g powdered sugar
  • 2 dl double cream
  • 1 pinch cinnamon
  • salt
  • pepper

Technical Stages :

  • Prepare a white roux.
  • Pour in the beer, season with salt and pepper, then with sugar and cinnamon.
  • Bring to a boiling point, whisking, to obtain a creamy and homogeneous soup.
  • Let simmer for about 20 minutes.
  • Cream.
  • Pour the soup in a large bowl, and put toasted bread slices on top.
