  • 300 g fresh cantal cheese
  • 1.5 litre broth, white stock or water
  • 200 g country-style bread
  • 30 g butter or lard
  • 6 onions
  • salt
  • pepper

Technical stages for Cantal Soup :

  • the onions. in butter or lard. with broth, white stock or boiling water. Salt and add pepper liberally.
  • Simmer for 30 minutes.
  • Slice the bread and mince the cantal in thin strips.
  • Put the bread and cheese in layers in a baking pot. Pour the warm broth on top of it, with the onions. Cover and cook for 30 minutes in the oven at medium heat.
  • Serve immediately.
