Onion Soup Gratiné

Ingredients for Onion Soup Gratiné :

  • 500 g onions
  • 30 g flour
  • 1 litre 1/4 chicken or veal white stock
  • salt
  • pepper
  • grated cheese
  • dry bread
  • butter

Technical stages for Onion Soup Gratiné :

  • Mince the onions.
  • In a stockpan, melt the butter and add the onions.
  • Sweat until slightly browned.
  • Add flour and stir using a wooden spatula.
  • Add gradually the white chicken stock or white veal stock or just water.
  • In the bottom of gratin dishes, place a slice of dried bread.
  • Add a bit of grated cheese then pour the onion based mixture.
  • Add another slice of hard bread and grated cheese once again and finish with an onion mixture.
  • Sprinkle a last coat of grated cheese and broil in hot oven (or broiler).
  • Serve very hot.
