Soup

For this recipe, you need :

  • 3 dozen oysters
  • 50 g butter
  • 2 tablespoons flour
  • 1.5 litre broth
  • 1/4 litre milk
  • 1 egg yolk
  • 1 bunch chervil
  • 6 toasted bread croutons
  • salt
  • pepper

Technical Stages :

  • Open the oysters and filter the water.
  • Prepare a blond roux in a pot with butter and flour. Add the milk and warm broth. Whisk.
  • Take the equivalent of one cup of broth and whisk the egg yolk in it. Pour this mix into the warm soup. Stop boiling. Over low heat, warm up the filtered water from the oysters. When simmering, poach the oysters. The water must not boil!!!
  • Cover and poach for 3 minutes (at most).
  • Take out and put in a serving dish. Pour the bound warm broth on it. Serve with toasted bread croutons and a few chervil spirgs.
  • Serve immediately.
