Technical stages for Fish Soup :
- the onion in olive oil.
- Add the minced leek, crushed garlic and celery.
- Add the fish bones. Let it sweat.
- Add the tomato paste, with water.
- Season. Add the fennel and cayenne pepper. Cook for 2 hours over medium heat. When finished, puree.
- Bring to a boiling point and mix again to refine the soup. Add the saffron and correct the seasoning. Serve with croutons rubbed with garlic, rouille and gratted cheese.
