  • leek
  • celery
  • tomato paste
  • fish bones
  • bouquet garni
  • cayenne pepper
  • saffron
  • salt
  • pepper
  • fennel seeds

Technical stages for Fish Soup :

  • the onion in olive oil.
  • Add the minced leek, crushed garlic and celery.
  • Add the fish bones. Let it sweat.
  • Add the tomato paste, with water.
  • Season. Add the fennel and cayenne pepper. Cook for 2 hours over medium heat. When finished, puree.
  • Bring to a boiling point and mix again to refine the soup. Add the saffron and correct the seasoning. Serve with croutons rubbed with garlic, rouille and gratted cheese.
