Florentine Steaks

For this recipe, you need :

  • two steaks weighing 400 grams each (1 steak for 2 servings)
  • 15 cl olive oil
  • 6 tablespoons butter
  • 2 tablespoons lemon juice
  • 2 tablespoons parsley
  • salt
  • pepper

Technical Stages :

  • Remove the fat form the steaks if necessary.
  • Mix the olive oil, 4 tablespoons of melted butter and the pepper in a large bowl. Marinate the steaks in it for 30 minutes, turning them 2 or 3 times.
  • BBQ the steaks or cook them on a very warm grill (beware not to burn the meat), according to how your guests like their meat better (rare, medium rare, done). Salt the pieces while they are cooking.
  • Melt the remaining butter, add the lemon juice and chopped parsley.
  • Put the steaks on a warm service dish and cover with sauce.
  • Serve warm.
