Ingredients for Transparent Melted Sugar :

  • 1 kg powdered sugar
  • 350 ml water
  • 300 g glucose
  • food ink (optional)

Technical stages for Transparent Melted Sugar :

  • Slowly melt the sugar in simmering water. Brush the sides of the pot with a wet brush to prevent the sugar from clustering.
  • Add glucose, bring again to a boil, remove from heat and cover with a wet cloth.
  • Use this recipe for the colourless base of decorations, frames or even transparent decorations.
  • To colour the sugar, add food ink at 140°C or 284°F and cook it until the temperature reaches 152°C or 306°F.
