Technical stages for Transparent Melted Sugar :
- Slowly melt the sugar in simmering water. Brush the sides of the pot with a wet brush to prevent the sugar from clustering.
- Add glucose, bring again to a boil, remove from heat and cover with a wet cloth.
- Use this recipe for the colourless base of decorations, frames or even transparent decorations.
- To colour the sugar, add food ink at 140°C or 284°F and cook it until the temperature reaches 152°C or 306°F.
