Ingredients for "Rock" Sugar :

  • 250 g sugar
  • 1 dl water
  • 8 g royal icing

Technical stages for "Rock" Sugar :

  • Prepare a syrup with the sugar and water and cook at 140°C or 284°F (use a sugar thermometer).
  • Combine the royal icing.
  • The sugar will then get white and start to foam.
  • Pull the sugar up and down twice, using a wooden spatula and the stove.
  • Pour the sugar in a aluminium covered box.
  • Leave to cool.
  • Unmold and cut the sugar to give it fancy shapes.
  • As the name indicates it, it looks like a "volcanic" rock.
