  • 100 g pitted black olives
  • 100 g anchovy fillets
  • 100 g de capers
  • 10 cl olive oil
  • 1/2 tsp mustard

  • In a mortal, crush the olives along with anchovies, mustard and capers until perfectly mixed and smooth. Add olive oil progressively and whisk the mixture like a mayonnaise.
