Ingredients for Salmon Tartar :

  • 200 g salmon fillets
  • 2 limes
  • 1 shallot
  • 300 g tomatoes
  • basil
  • salt
  • pepper
  • green pepper
  • 100 g olive oil (50+50)
  • 1 yogurt

Technical stages for Salmon Tartar :

  • Peel the salmon and dice the meat, set aside in the fridge.
  • Press the limes and set the juice aside.
  • Peel and the shallot, set aside. Peel and dice the tomatoes. Chop the parsley.
  • In a metal bowl, put the salmon dice and season with salt and pepper. Add the lemon juice, basil, green pepper, shallot and 50 g oil.
  • Combine with the yogurt at last until you obtain a homogeneous mix.
  • Season the tomato dice, add the basil and remaining oil. Put a circular frame in the middle of a plate and garnish with the tartar. Sprinkle with green pepper. Remove the frame and put the tomato dice with basil all around.
