Technical stages for Salmon Tartar :
- Peel the salmon and dice the meat, set aside in the fridge.
- Press the limes and set the juice aside.
- Peel and the shallot, set aside. Peel and dice the tomatoes. Chop the parsley.
- In a metal bowl, put the salmon dice and season with salt and pepper. Add the lemon juice, basil, green pepper, shallot and 50 g oil.
- Combine with the yogurt at last until you obtain a homogeneous mix.
- Season the tomato dice, add the basil and remaining oil. Put a circular frame in the middle of a plate and garnish with the tartar. Sprinkle with green pepper. Remove the frame and put the tomato dice with basil all around.
