Lemon Meringue Pie

Ingredients for Lemon Meringue Pie :

	1 Prepare all the ingredients.
	2 Roll out the sweet dough.
	3 Place it on a greased tart ring...
	4 ...and ease the ring.
	5 Place a sheet of aluminium foil on the bottom of the dough and pour baking nodules on top.
	6 Prebake the tart shell.
	7 When finished, or 15 minutes later, remove the sheet from the oven and remove the aluminium foil and the baking nodules.
	8 Leave the tart shell to cool.
	9 Zest and press the lemons.
	10 Gather in a sauce pan lemon juice, zests, sugar and whole eggs.
	11 Cook until boiling using a wooden spatula or a whisk to constantly stir. (Be careful with the cooking)
	12 At the end, add butter cut in pieces.
	13 Pour the lemon preparation in the bottom of the prebaked shell.
	14 Leave to form a crust on the surface for a few minutes...
	15 ...and bake at 130°C...
	16 ...for about 15 minutes.
	17 When finished, remove from the oven and leave to cool.
	18 Beat the egg whites until firm.
	19 Add caster sugar and continue to beat on high speed for 5 good minutes.
	20 Dress the meringue on the cooled lemon tart...
	21 ...using a decorating bag and a large fluted decorating tip.
	22 Brown the meringue in ahot oven (under the broiler) or using a torch.
	23 Store in the fridge until time for dessert.
