Raspberry Pie

For this recipe, you need :

  • 1 shortcrust pastry shell
  • 1/2 litre pastry cream
  • 4 baskets raspberries
  • icing sugar

Technical Stages :

  • Prepare a shortcrust pastry shell. Bake blind. Meanwhile, prepare the pastry cream.
  • Spread the cold pastry cream onto the baked shell.
  • Line up the raspberries one at a time on the surface of the pie (don't wash the raspberries as it would harm them).
  • Level with the palm of your hand.
  • Sprinkle with icing sugar.
