Ingredients for Leek Tart :

  • Pastry:
  • 250 g flour
  • 125 g butter
  • water
  • salt
  • Filling:
  • 5 eggs
  • 500 g leeks
  • 1/2 litre crème fraîche
  • nutmeg
  • salt
  • pepper
  • 50 g butter

Technical stages for Leek Tart :

  • Make a shortcrust pastry.
  • Leave the dough to rest in the fridge for half an hour.
  • Peel, wash and mince the leeks.
  • In a frying pan, brown them in butter until they are well browned.
  • Roll out the short crust pastry and line in a mold that was buttered and floured.
  • In a bowl, beat the eggs along with the crème fraîche, salt, pepper, a little bit of nutmeg.
  • Add the fried leeks.
  • Pour this preparation on the pastry.
  • Bake 25 mn in hot oven at 180°C.
