Tarte Tatin with Pears

Ingredients for Tarte Tatin with Pears :

  • 400 g flaky pastry
  • 1 kg pears
  • 140 g sugar
  • 50 g butter

Technical stages for Tarte Tatin with Pears :

  • In a baking pan, make a blend caramel with sugar and butter directly on the heat.
  • Once well coloured, peel and seed the pears.
  • Cut them in half lengthwise and cut each half in three pieces.
  • Line the pears in the bottom of the pan.
  • Place the mold on heat and cook the pears about 10 minutes so that they soak in well the caramel.
  • Roll out the flaky pastry...
  • Line the mold with the pastry and stick the sides beteween the mold and its sides.
  • Poke the surface of the pastry using a fork.
  • Bake 30 minutes in hot oven, 180°C.
  • When finished, remove immediately the tart onto a serving dish by placing the mold on it and flipping it in one movement. Watch for splashes !!!
