Courgette Terrine with Fresh Goats Cheese
Technical stages for Courgette Terrine with Fresh Goats Cheese :
- Finely the courgettes using a mandoline.
- Steam them for 10 minutes.
- Mix the goat cheese with the thick cream and add the olive oil.
- In a little bit of cooking water used for courgettes, melt the gelatin that was previousely soaked in cold water.
- Add it to the previous preparation.
- Beat the liquid cream into whipped cream and add it to the preparation.
- Spread out the slices of courgettes in a silicone muffin mold.
- Pour a bit of the mixture then another layer of courgettes and so on.
- Place in the fridge a few hours before servings.
