Prepare all ingredients:
Finely the courgettes using a mandoline.
Steam them for 10 minutes.
Mix the goat cheese with the thick cream...
...and add the olive oil.
Mix well.
In a little bit of cooking water used for courgettes, melt the gelatin that was previousely soaked in cold water.
Add it to the previous preparation.
Beat the liquid cream into whipped cream...
...and add it to the preparation.
Spread out the slices of courgettes...
...in a silicone muffin mold.
Pour a bit of the mixture then another layer of courgettes...
...and so on.
Place in the fridge a few hours.
Unmold.
Serve.
