Technical stages for Tuna Brandade :
- Peel and wash the potatoes.
- Boil them.
- Peel and crush the garlic.
- Mix th ecrushed garlic and flaked tuna in a bowl.
- Mix thoroughly in order to get a thin purée. When the potatoes are cooked, purée them.
- Bring the milk to a boil.
- Combine the mashed potatoes with the tuna and gradually add the olive oil and boiling milk. Stir with a wooden spatula. Season with salt and pepper.
- Arrange the brandade as a dome on a warm service dish. Decorate with black olives.
- Serve warm.
