Ingredients for Tuna Brandade :

  • 1 kg potatoes
  • 250 g bread crumbs
  • 2 garlic cloves
  • 1 glass olive oil
  • 20 cl milk
  • 20 black olives
  • salt
  • pepper

Technical stages for Tuna Brandade :

  • Peel and wash the potatoes.
  • Boil them.
  • Peel and crush the garlic.
  • Mix th ecrushed garlic and flaked tuna in a bowl.
  • Mix thoroughly in order to get a thin purée. When the potatoes are cooked, purée them.
  • Bring the milk to a boil.
  • Combine the mashed potatoes with the tuna and gradually add the olive oil and boiling milk. Stir with a wooden spatula. Season with salt and pepper.
  • Arrange the brandade as a dome on a warm service dish. Decorate with black olives.
  • Serve warm.
