Ingredients for Tomato, Mozzarella :

  • 4 nice red tomatoes
  • 250 to 300 g mozzarella
  • 1 bunch basil
  • olive oil
  • balsamic vinegar
  • salt
  • pepper
  • mustard
  • Guérande salt
  • pinion nuts or grenoble nut pieces (optional)

Technical stages for Tomato, Mozzarella :

  • Finely the tomatoes in even slices.
  • Spread the tomatoes in a rose-like shape onto the plates.
  • Drain the mozzarella and finelly mince it.
  • Insert the mozzarella slices between the tomato slices.
  • On the side, make a slightly mustarded vinaigrette.
  • Season the tomatoes and mozzarella. Finish by sprinkling chopped basil leaves and a dash of olive oil.
  • My secret:
  • At the last moment I add a pinch of Guérande salt. It will reinforce the taste of the tomato and make this dish even more refreshing.
