Ingredients for Stuffed Tomatoes with mozzarella :

  • 4 large tomatoes for stuffing
  • 1 small cucumber
  • 1/2 yellow bell pepper
  • 4 small sweet red peppers
  • 1 ball of mozzarella
  • 120 g black olives
  • 1 bunch basil
  • 1 tsp white wine vinegar
  • juice of 1/2 a lemon
  • olive oil flavoured with basil
  • salt
  • pepper
  • coriander seeds

Technical stages for Stuffed Tomatoes with mozzarella :

  • Wash the tomatoes. Cut off the top, scoop out the pulp and add salt inside. Flip them over on a rack coated with a cloth.
  • Dice the mozzarella and cut the seeded bell pepper into strips. Peel and cut the cucumber in pieces.
  • In a salad bowl, mix all together with vinegar, lemon juice, 3 tsp olive oil, salt, 5 coriander seeds and crushed peppercorn.
  • Dry the inside of the tomatoes with paper towel. Fill them with the prepared items. Decorate with one pepper and olives. Place in the fridge for 1 hour.
  • Place the tomatoes on plates. Decorate with basil and crushed peppercorn. Drizzle with olive oil and serve.
