Fish Tortellini à la Basquaise

Ingredients for Fish Tortellini à la Basquaise :

  • 250 g of tortellini
  • 2 boneless fillets of white fish (hake...)
  • 1 red bell pepper
  • 1 green bell pepper
  • 100 g courgettes
  • 1 can peeled tomatoes
  • 1 small can tomato paste
  • oregano
  • paprika
  • salt
  • olive oil
  • lemon juice

Technical stages for Fish Tortellini à la Basquaise :

  • Cook the tortellini with a bit of olive oil and salt.
  • In a saucepan, brown the bell peppers cut into small bits in a bit of olive oil.
  • Add the courgettes cut into pieces.
  • Then the peeled crushed tomatoes and the concentrate.
  • Finally add the oregano, a bit of paprika and salt.
  • Leave to simmer on medium heat.
  • In a frying pan, cook the fish with a drizzle of olive oil.
  • When halfway cooked, baste the fish with a drizzle of lemon juice.
  • When the fish is cooked, cut into pieces and add it to the previousely cooked vegetables.
  • Mix altogether and leave to simmer until the vegetables soften.
  • Serve the tortellini hot along with the fish preparation à la Basquaise.
  • Serve immediately.
