Fish Tortellini à la Basquaise

Technical Stages :
- Cook the tortellini with a bit of olive oil and salt.
- In a saucepan, brown the bell peppers cut into small bits in a bit of olive oil.
- Add the courgettes cut into pieces.
- Then the peeled crushed tomatoes and the concentrate.
- Finally add the oregano, a bit of paprika and salt.
- Leave to simmer on medium heat.
- In a frying pan, cook the fish with a drizzle of olive oil.
- When halfway cooked, baste the fish with a drizzle of lemon juice.
- When the fish is cooked, cut into pieces and add it to the previousely cooked vegetables.
- Mix altogether and leave to simmer until the vegetables soften.
- Serve the tortellini hot along with the fish preparation à la Basquaise.
- Serve immediately.
