Prepare all the ingredients.
Cook the tortellini with a bit of olive oil and salt.
In a saucepan, brown the bell peppers cut into small bits in a bit of olive oil.
Add the courgettes cut into pieces.
Then the peeled crushed tomatoes...
... and the concentrate. Finally add the oregano, a bit of paprika and salt.
Leave to simmer on medium heat.
In a frying pan, cook the fish with a drizzle of olive oil.
When halfway cooked, baste the fish with a drizzle of lemon juice.
When the fish is cooked, cut into pieces and add it to the previousely cooked vegetables.
Mix altogether and leave to simmer until the vegetables soften.
Serve the tortellini hot along with the fish preparation à la Basquaise.
Serve immediately.
