Prepare all the ingredients.
the potatoes in salted water. Then drain them.
the peppers and onion with a mincing knife.
the vegetables in a non-stick frying pan with a drizzle of olive oil.

In a bowl or a shallow dish, break the whole eggs. Add salt and pepper.
Whisk vigorously.
Dice the cooled cooked potatoes.
Add them to the beaten eggs fried veggies too.
Mix well using a wooden spoon. Adjust the seasoning.
