Olive Tournedos Steaks

Ingredients for Olive Tournedos Steaks :

  • 4 tournedos steaks weighing 180 grams each.
  • 4 nice tomatoes
  • 16 black olives
  • 4 tablespoons anchovie paste
  • 4 tablespoons oil
  • salt
  • pepper

Technical stages for Olive Tournedos Steaks :

  • Cut the tomatoes in 3 horizontally and cook then in a pan with 2 tablespoons oil. Add salt and pepper. Cook over strong heat for 5 minutes on each side.
  • Heat up the remaining oil in a second pan.
  • Brush the tournedos with the anchovie paste.
  • Seal the tournedos in th every hot pan. Cook for 3 minutes on each side. Do not add salt! Add pepper.
  • When finished, add the olives.
  • Serve the tournedos hot with the tomatoes and the cooking juices with olives.
