Technical Stages :
- Cut the tomatoes in 3 horizontally and cook then in a pan with 2 tablespoons oil. Add salt and pepper. Cook over strong heat for 5 minutes on each side.
- Heat up the remaining oil in a second pan.
- Brush the tournedos with the anchovie paste.
- Seal the tournedos in th every hot pan. Cook for 3 minutes on each side. Do not add salt! Add pepper.
- When finished, add the olives.
- Serve the tournedos hot with the tomatoes and the cooking juices with olives.
