Chocolate Truffles

For this recipe, you need :

  • 500 g dark chocolate
  • 1/2 litre whipping cream
  • 50 g butter
  • 1/8 litre raspberry puree
  • cocoa powder

Technical Stages :

  • Heat up the whipping cream.
  • Pour on the chocolate cut in pieces. Let it melt.
  • Whisk and combine with the butter in chunks and the raspberry puree.
  • Let it set in the fridge.
  • Between the palm of your hands, shape this mix into balls.
  • Roll in cocoa powder.
  • Shake to remove the excess cocoa and dip in melted dark chocolate. Roll again in cocoa powder.
  • Leave to set in the fridge.
  • Keep refrigerated.
