Veal

Tomato Veal
  • For : 6 servings

For this recipe, you need :

  • 1.2 kg veal shoulder
  • 60 g butter
  • 700 g tomatoes
  • 2 onions
  • 8 peppercorns
  • 1/2 teaspoon chopped tarragon
  • salt

Technical Stages :

  • Ask the butcher to bone, roll and tie the shoulder so that it stays together when cooking.
  • Seal the meat in butter in order to give it a nice golden color.
  • Add salt.
  • Peel, seed and crush the tomatoes. Finely ciseler the onions.
  • Make the onions sweat in butter. Add the tomatoes, crushed peppercorns and tarragon. Pour this preparation on the meat. Cover and bake in warm oven (150°C or 302°F) for 1h30 to 2 hours.
  • When finished, remove the string. Slice the shoulder and serve warm, coated with tomato sauce.
