Technical stages for Pumpkin Velouté :
- Carve the pumpkin into a soup dish, to do it cut the top, remove the seeds and fibers and gently remove the flesh using a spoon.
- Dice the flesh.
- Peel and seed the apple and the pear.
- Cut in pieces.
- Place the 3 fruits and vegetables in a saucepan.
- Add 10 cl water, salt, and pepper.
- Cook covered for about 20 minutes on very low heat.
- Meanwhile, remove the zests of the orange.
- Pour the milk in a saucepan. Add the orange zests, nutmeg, and grated ginger.
- Bring to a boil, remove from the heat and leave to infuse for 10 minutes.
- Strain the milk.
- Blend the pumpkin and the fruits.
- Add the infused milk and the cream.
- Heat once again and adjust seasoning.
- Serve in the pumpkin soup dish.
