Pumpkin Velouté

Ingredients for Pumpkin Velouté :

  • A small pumpkin of about 1.5 kg
  • 1 apple
  • 1 pear
  • 1/2 orange
  • coriander
  • 1/2 litre milk
  • 10 cl liquid cream
  • nutmeg
  • 1/4 teaspoon ginger
  • salt
  • pepper

Prepare all ingredients:

Meanwhile, remove the zests of the orange.

Pour the milk in a saucepan. Add the orange zests, nutmeg, and grated ginger.

...remove from the heat and leave to infuse for 10 minutes.

Blend the pumpkin and the fruits.
