Pumpkin Velouté

For this recipe, you need :

  • A small pumpkin of about 1.5 kg
  • 1 apple
  • 1 pear
  • 1/2 orange
  • coriander
  • 1/2 litre milk
  • 10 cl liquid cream
  • nutmeg
  • 1/4 teaspoon ginger
  • salt
  • pepper

Pour the milk in a saucepan. Add the orange zests, nutmeg, and grated ginger.
